This is a salad I first tried out of a recipe book cuz I was having weird pregnancy fetishes. Not normally a dish that I would have tried, but I’m glad I did cuz it’s YUMMY.
I made it for Alexander and even he enjoyed it, despite the high proportion of rabbit food!
1/2 cup rinsed, drained, canned chickpeas
1 lebanese cucumber (130g), chopped coarsely
1/2 small red onion (50g), sliced thinly
1/2 cup (40g) seeded kalamata olives
1/2 cup fresh flat-leaf parsley leaves
1/4 coarsely chopped yellow capsicum
1 small egg tomato (90g), chopped
2 tablespoons tzatzikidressing
1 tablespoon lemon juice
1 teaspoon olive oil
1/4 cup finely chopped lemon rind
1/4 teaspoon ground cuminCombine chickpeas, cucumber, onion, olives, parsely, capsicum and tomato in a medium bowl.
Combine ingredietns for dressing in screw-top jar, shake well.
Toss dressing with salad. Top with tzatziki.
